Pickle thing dip has all the taste of a classic pickle wrap with half the work! Salty, creamy, crunchy, and totally addictive, this dip just the thing to take to parties and potlucks!
What the heck is a pickle thing? You might know them as pickle wraps, pickle rolls, or cream cheese pickles but in my family we call them pickle things. Either way, it's the same thing– dill pickles wrapped in dried beef or ham that's first spread with a generous portion of cream cheese. I must admit this combination sounds odd at first. Like this totally had to have been invented by a bachelor whose cupboards were practically bare, but it totally works.
Pickle things/wraps are salty, crunchy, creamy and a perfect party app. Or the perfect munchy to enjoy while you're watching the big game. Go Chiefs! I'm not a huge football person, I love high school football, but I don't have TV, so pro sports aren't really my thing. I would love, love, love to see the Chiefs take down the Patriots though. Fingers crossed.
I was first introduced to pickle things by my Aunt Bea, who would say that she's no culinary whiz, but who brings the best dips and snacky junk to all our family gatherings. She also makes a dill dip that I adore.
But y'all, I'm lazy! And I didn't want to go through the work of spreading the cream cheese on every slice of dried beef and then the rolling them up, so I took the ingredients and made this pickle thing dip. Half the work, all the taste! You are going to love this dip. Also, not to toot my own horn, but this is the first recipe of mine that immediately after trying it my mother-in-law said she had to have the recipe. So, that means it's got to be good, right!?!
What will you need to make pickle thing dip?

A softened block of cream cheese

One jar of dried beef

One jar of kosher dill spears
-
Dill weed
-
Sour cream
Please note, if you don't like dried beef you can substitute 2 ounces of your favorite thin sliced deli meat! Ham, turkey, roast beef, pastrami! Anything goes.

Ingredients
- 1 (2.25 ounce) jar dried beef
- 6-8 kosher dill pickle spears
- 8 ounces cream cheese, softened
- 1/2 cup sour cream
- 1 teaspoon dill weed
Instructions
- Chop up the dried beef and dill pickle spears into small pieces.
- Mix together the cream cheese, sour cream and dill weed until well combined. Then stir in the dried beef and dill pickles and enjoy! Serve with crackers or cocktail toasts.
Notes
This recipe will keep for several days in an airtight container in the fridge, but I like it best the day of making it.
Also, feel free to substitute your favorite thinly sliced deli meat in the place of the dried beef. Ham, turkey, roast beef, and pastrami will all work well with this dip too!
